How should I best use soy milk in my coffee?
Sometimes soy milk curdles in coffee - that's a natural effect that also happens when tofu is made. Whether soy milk curdles depends on the pH value of your coffee. Superior arabica coffees have a different pH value than the robusta blends used in cheaper brands. You can find out for yourself that soy milk hardly reacts to arabica coffees, whereas it's more likely to curdle in robusta coffee. By the way, this effect also occurs with animal milk, but is normally prevented by pH stabilisation of the milk. You can influence the curdling to a certain extent by adding a small amount of salt to the coffee.
Can I foam soy milk?
A protein proportion of 2 per cent is ideal for foaming soy milk. As the proportion of protein in Viana SoActiv is about 3.4 per cent, you should first mix two parts of soy milk with one part of water. Then heat the mixture - not too much, about 70 to 80 degrees Celsius are enough. Now you can foam the milk as accustomed, e.g. with the steam vent of an espresso machine, an electric or manual milk foamer or with a normal kitchen blender at high speed.
